The dairy farm transforms 900 tons of milk produced annually from the stalls into
around 1600 wheels of Parmigiano-Reggiano cheese a year, registry number
3280 PR.
The dairy, other than the DOP product Parmigiano-Reggiano certified by n. 379/03
PC 02, products also caciotta and ricotta, or cottage cheese,
always made with the dairy's own milk.
The secret of the Butteri dairy is in the quality and attention with which all the members
of the family dedicate themselves to their respective duties from the raising of the cows,
to the cheese making.
